Cream of Broccoli Soup
Ingredients with
Carb count
2 heads broccoli (approximately 6 cup of raw) 2.2
carbs per ½ cup = (13.2 carbs)
½ C onions (5 carbs) or substitute green onions for
lower carb count = (2.4)
1 clove garlic (.9 carbs)
5 C chicken broth (0)
2Tbl. Butter (0)
1 C heavy whipping cream (3 carbs)
1- 2 tsp of fresh basil or oregano (<.1carbs)
Preparation
- Sauté ½ C of
onions & 1 clove of garlic in 2 Tbl butter, then
add broccoli and brown on all sides.
- Add 5 cups of
water. Cook until Broccoli is mushy
- Cool slightly
and puree in blender. Add more chicken broth if
mixture is too thick.
- Pour back into
pan, reheat and add ½ Cup of whipping cream. Do
not boil.
- Flavor with
salt, pepper and a dash o basil or oregano. Add
a Cup of shredded cheddar cheese.
Other flavor
combinations:
Substitute Cauliflower (.9 for ½ Cup) or Spinach (.1
for ½ C) for Broccoli. With Cauliflower or Spinach
you can substitute nutmeg or curry powder for your
spice (<.6). You can use chopped tomatoes (1 plum
2.2) with either or add green olives (.1 for 5),
black olives (.7 for 5) or marinated artichokes (2
for 4 pieces). You can spice it up further with a
1Tbl of vinegar (cider .9, rice .0 or white .0); 1
tsp. of soy sauce (1.5), 1 tsp Worchester sauce (1)
or mustard (.5 for 1 tsp) - again pay attention to
carb count and sugar content. |
